Holiday Appetizer: Lobster Avocado Red Bell Pepper Bites

Earlier this month, I came up with a holiday appetizer for an Instagram partnership. I have to say, it’s such a win that I wanted to bring it over to you guys on the blog who may have missed it (post here!). These Lobster Avocado Red Bell Pepper Bites are so delicious – and easy!

When I came up with a holiday appetizer idea, I knew I wanted it to be New England-inspired, but I also wanted it to have some red and green flare and look festive! What’s more perfect than adding lobster into the mix?! Honestly, half of holiday appetizers is how they look  – the other half is taste, obviously. đŸ˜‹ Happy to share that these offer both! These Lobster Avocado Red Bell Pepper Bites are almost a Maine-meets-California inspired dish. You have fresh Maine lobster and then you’re met with fresh red bell pepper and creamy avocado. It’s delicious and sure to wow!

Holiday Appetizer: Lobster Avocado Red Bell Pepper Bites

I have a few tips for this recipe. First, since this dish has avocado in it, I recommend making this just before you’re going to serve it so that you don’t wind up with brown avocado when it’s time to serve. You could certainly mix the rest in a bowl the day before and then add avocado the day of!

Secondly, you don’t want your crackers getting soggy. I served this on crackers, but I bet this would be just as delicious on slices of toasted baguette!

And lastly, I recommend making this with fresh lobster meat that has a mix of tail, knuckle, and claw meat. We’re lucky to have lots of seafood markets in Maine where you can buy already picked, fresh lobster meat very easily. You can certainly use frozen lobster meat that has thawed, however, know that you may have more moisture in the lobster meat. After it has thawed, I recommend squeezing it in a paper towel to get out as much water as you can. Also, frozen lobster meat (unless you find tails) is often primarily claw meat which tends to have more moisture in it compared to a lobster tail.

Lobster Avocado Red Bell Pepper Bites

Ingredients:

1 cup red bell pepper, diced
1 avocado, diced
1 1/2 Tablespoons green onion, chopped finely
1 cup fresh lobster meat, chopped
1/2 lime, squeezed
1 teaspoon olive oil
1/2 teaspoon red chili flakes
Salt and pepper, to taste

Instructions:

Mix ingredients in a bowl and top on your favorite cracker or baked baguette slices!
